
2 mugs medjool dates (400gm)
10 Tbsp almond butter
4 Tbsp coconut oil
3 Tbsp cacao powder
Place the dates in a saucepan with a little boiling water. Allow them to cook for 5 minutes, until they're really soft and all sticking together.
If there is any water left in the pan, drain, and then set dates aside to cool for a couple of minutes.
Place almond butter, oil, cacao and dates in a food processor and blend for a minute or two, until a sticky paste forms.
Line a baking dish (~25cm) with baking paper and pour the mix in before putting it in the freezer for at least three hours to set.
Store in the freezer.
You can add chunks of nuts or dried fruit to this to change the texture or for a really decadent treat, try rolling frozen cubes in dark chocolate!
