Banana Crumble Cake


Ingredients

1 ½ cups dates

1 ½ cups water

100 gms butter or oil

2 ripe bananas

2 eggs

1 cup flour

½ cup ground nuts or coconut

1 tsp cinnamon

¼ tsp nutmeg

1 tsp baking powder

1 tsp baking soda


Topping

1/2 cup almonds

3/4 cup oats

1 1/2 heaped Tbsp coconut oil

40ml maple syrup

1 tsp cinnamon

Directions

To make the topping;

  1. Place almonds in a food processor and blend for a few minutes until a flour forms. Add oats and mix to combine.
  2. Heat coconut oil, maple syrup and cinnamon together until melted and mixed.
  3. Stir the fluids through the dry ingredients until well combined.
  4. Set aside.
To make the cake;
  1. Place the dates and water in a saucepan and simmer for 10 minutes,stirring frequently to make a thick paste.
  2. Remove from heat and add butter/oil. Whisk in mashed banana and egg to combine well.
  3. In a separate bowl, sift dry ingredients together. Pour in wet mixture and fold in until just combined.
  4. Pour mixture into lined tin and add topping if using.
  5. Bake at 180°C for 50-60 minutes.
