Gluten Free Fruit Crumble


Ingredients

Use any combination of seasonal fruit;  I often use apples (approx 6) ,and combine with some feijoa or berries. 

Peaches / apricots / plums can also be used.


Topping

1 cup almonds

1 ½ cup oats

3 heaped Tbsp coconut oil

1/3 mug maple syrup

1-2 tsp cinnamon



Directions

  1. Place almonds in a food processor and blend for a few minutes until aflour forms. Add oats and mix to combine.
  2. Heat coconut oil, maple syrup and cinnamon together until melted andmixed.
  3. Stir the fluids through the dry ingredients until well combined.
  4. Layer fruit in the bottom of large dish. Depending on fruit used, you may want sweeten slightly by stirring 1 Tbsp maple syrup/coconut sugar through the fruit. Add a little water to dish.
  5. Top fruit with crumble topping.
  6. Bake in medium oven (180°C) for 45 minutes until fruit cooked and top is nicely browned.
